Superbon is a monthly series for paid subscribers only of the things that are, well, superbon. The creme de la creme of the past month. Without further ado, my favorite flavors and finds.
This was a doozy of a month. So many out of town visitors, so many travels, so much deliciousness… and so little sleep. I’ve actually saved all my favorites from recent trips to Burgundy for another newsletter because there’s just too much to stuff into one single substack.
The fish sauce wings from Smoking Goat in London were a sticky, spicy last lunch before boarding the Eurostar back to Paris. The finger bowl was very much necessary.

The trio of mini souffles (salted caramel, Grand Marnier, and chocolate) highlight what Auberge Bressane does best: hearty classic French food with a side of spectacle. Order any and all of their flaming desserts. I got an entire copper saucepot of coq au vin that could have easily fed three people.
The photo doesn’t do justice to the richness of this dish from the Michelin-starred Le Sergent Recruteur. It was spring on a plate: morel mushrooms, vin jaune, asparagus and ail des ours (wild bear’s garlic). A very good value tasting menu near Notre Dame, which is an area I generally avoid eating around.


The rice chip with sea brea and shrimp crudo with chili oil and rhubarb pickles at Tram 130 was an explosion of flavor and texture. The fat white asparagus with yuzu sabayon and buttered ail des ours rice was also excellent. I had a whole lot of classic French food this month and it was so nice to have something slightly different.
