Superbon: March Edition

Superbon is a monthly series for paid subscribers only of the things that are, well, superbon. The creme de la creme of the past month. Without further ado, my favorite flavors and finds.
I had a craving for the braised lamb shoulder foccacia sandwich from Café Mericourt one morning. I do not often crave morning lamb. My friend Lewis very kindly indulged me and it was perfect.


We made a small detour from Beaune to visit Aaron Ayscough’s new cave à vin in Chagny, La Cave du Centre. Chagny has a wonderful Sunday morning market and it’s well worth visiting here for lunch after. It’s a one-man operation with Aaron running service, cooking, and even washing the dishes by hand. His flavors were on-point and I particularly enjoyed the fennel salad with anchovy and orange, rigatoni al ragu and the (unpictured) tortilla.
The granola bowl (sans granola because I’m allergic to almonds) from Caphette with mango sago and pomelo and Greek yogurt was absolutely glorious. I also tried their egg coffee and it was like sipping a glass of caffeinated zabaglione, and I’m not mad about that.
